Vinification and ageing: the grapes are processed immediately after harvesting with a very soft crushing that allows about 30% of the whole berries to remain intact. Maceration at spontaneous cellar temperature for about 12 days to obtain a must with a lively and intense colour. The must obtained is fermented with spontaneous fermentation with indigenous yeasts. At the end of fermentation, the wine stays on the fine lees for at least six months.
